The sixth-seeded Granollers, who beat James Blake in last year’s final, broke Haas in the fifth game to take the opening set due to a string of errors from Haas.
But the German recovered to comfortably win the following sets and leave the Houston tournament without a seeded player in the quarter-finals for the first time since 1968.
Elsewhere, Russia’s Evgeny Korolev held off the challenge of a resilient Daniel Gimeno-Traver of Spain to take a 6-3 7-6 (7/4) victory.
Korolev was in control until mid-way through the second set when Gimeno-Traver fought back to force a tie-breaker.
Bjorn Phau also needed a tie-breaker to get past Scoville Jenkins of the United States after controlling the first set. The German eventually booked his place in the quarter-finals with a 6-4 7-6 (7/2) win.
And finally in the late game Argentina’s Guillermo Canas made light work of his match with Taylor Dent, beating the American in straight sets 6-2 6-2.
